During the summer the body calls for fresh, light and tasty dishes to fight the high temperatures and avoid heavy digestions; Especially when we are planning a picnic by the sea or by the pool. In this case, salads or tortillas are the classics par excellence; however, there are some different recipes for the beach or pool which can be just as tasty.
We have all find ourselves in this situation: when it comes to preparing beach recipes, we always recur to easy and typical dishes. The important thing, at the end of the day, is to enjoy the landscape and spend a nice day outdoors. However, when the menu is repeated over and over again one begins to get bored of always carrying the same snacks.
Therefore, time has come to innovate! There are dozens of healthy, tasty and light cold meals for the beach that can be easily transported in our Tupperwares. These are some of the best:
It´s an easy dish to prepare and perfect to share at an outdoor meal. To make it, you´ll need spring onion, carrot, zucchini or whatever vegetables you have on hand. For the dough, if you don´t want to make it too complicated, simply buy refrigerated crushed dough that is already made and ready. It might not be the same but it will definitely save you some time.
To cook it, first heat the oven at 180º Celsius. Stretch the dough in a mold and put it in the oven for 20 minutes (until it reaches a golden color), our recommendation is for you to put some vegetables on the dough so that it doesn´t swell; after this, sauté the vegetables in the pan. Then, fill the dough mold with the vegetables, cheese and 3 beaten eggs. Finally, bake again at 180ºC for 30 minutes or until golden brown.
Chicken Caesar Wrap
Wraps, if properly secured, are a simple and different option to enjoy a picnic on the beach. In this case, the filling is inspired by a chicken Caesar salad. For two people you´ll need: 2 wraps or 4 mexican tortillas, 2 marinated chicken breasts, 2 buds, Caesar sauce, 4 anchovies, 50 grams of onion and Parmesan cheese. For the marinating of the chicken breasts: the juice of 1 lemon, olive oil and a few drops of Worcestershire sauce.
The preparation for this récipe begins the day before, with the marinating of the chicken. The next day you´ll simply have to fry it fried and add the rest of the ingredients by cutting them into small pieces. Then, place everything inside the tortilla and close it carefully so that it reaches your destination perfectly.
Breaded pork tenderloin stuffed with ham and cheese
Original and different as it is,this is also one of the most convenient beach recipes. The ingredients: 6 pork tenderloins, 6 slices of cheese, 6 slices of ham, 2 eggs, breadcrumbs, salt and olive oil for frying.
To prepare them, you just have to spread the tenderloins, cover them with cheese and ham. The next step is to fold them, and to cover them with beaten egg and breadcrumbs. Before putting them in the pan, secure them with a toothpick so that they do not open. Finally simply fry them until golden brown. Now you´re ready to go!
Sliced bread vegetable cake
The sliced bread vegetable cake is one of the best recipes for the beach or pool. To prepare it you´ll just need: 100 grams of prawns, 1 head of lettuce, 100 grams of surimi sticks, 1 large egg, 8 green pitted olives, 1 small onion, 100 grams of bonito (in olive oil, if possible), salt, vinegar, extra virgin olive oil, mayonnaise and half small carrot.
Start by cooking the prawns and the egg and then chop the rest of the ingredients. Add the egg and the prawns when they are ready. The season it all with salt, vinegar, olive oil and mayonnaise. Cover the loaf with the stuffing and roll it carefully.
